Ten Mid-Spring Recipes.

Spring is here. Summer has also been here, but maybe it has retreated again for a bit. We are trying to encourage spring to return. We are wearing bright green, bringing yellow tulips from the farmer’s market, and thinking about springy recipes, and at last the springy ingredients are showing up.

Here are a few recipes that seemed to us very seasonal. 

  • Crabcakes with Arugula Salad. We love crab cakes, and mayonnaise, and arugula and capers. They all come together with more, in this fine dish.
  • Chicken Asparagus Casserole. We had a lot of casseroles when we were younger, but not so many recently. Probably a big mistake. Easy and delicious. And for spring, chicken and asparagus is a marriage made in heaven.
  • Spring Vegetable Fettuccine Alfredo. Fettuccine alfredi is of course a forbidden delight. But, obviously, when it is made with mushrooms, and asparagus, and peas and chives and lemons, it is a healthy Mediterranean alternative. So we will dive in. 
  • Spring Peas with Radish and Mint. For some reason, our families think radishes will kill you. We know better, so we eat them by the handful, Combining them with mint and peas is totally delectable. And a bit French. 
  • Farmers Market Potato and Asparagus Pizza. Potato pizza has always been a draw. Adding the omnipresent asparagus, and lots of other delightful spring market finds, sounds like a good pizza plan.
  • Seared Scallops with Spring Onion and Tarragon Cream. Scallops are so sweet and chewy, spring onions are so emblematic of the season, and tarragon in cream is always dreamy. We can’t wait to make this. 
  • Savory Waffles with Asparagus, Gruyere and Onion. Savory waffles? Waffles for dinner? Brilliant.
  • One Skillet Chicken with Buttery Orzo. Anything cooked in one pan is a keeper. Especially with orzo. Especially buttery orzo. And fennel so we can say we had a vegetable.  

Then there’s dessert. We will leave it at two. Just to show we do have self-control.
